Eggplant is such a good food that it’s hard for anyone not to like it. They are very versatile and can be part of the first or second course, as a side dish or as a delicious appetizer. In addition, they can be prepared in any way, one of them is fried. Unfortunately, the only problem arises when you want to fry them, because with this cooking method they absorb a lot of oil.

This disadvantage is due to the small cells that make this vegetable too fluffy. Basically, it’s these little cells that look like air pockets. When fried, they no longer open, but open and the eggplants are soaked in oil. Is there a way to prevent this from happening? Fortunately, the answer is yes! Let’s see how we can fix this problem.

This will prevent the aubergines from absorbing oil during frying.

Of course, eggplants are the food with the fewest calories. However, once you decide to fry, they inevitably become a completely unsuitable calorie bomb for your diet. In fact, they have the terrible flaw of being incredibly soaked in oil. To remove the oil, it is not even enough to dry them with absorbent paper, since unfortunately the fat is embedded in the internal structure of this vegetable.

To avoid all this and ensure that the small cells close and the oil does not penetrate, you will have to be patient to pre-cook the eggplants so that their absorbency is reduced to practically zero. If you happen to be thinking about the straightener, you should change your mind. Unfortunately, this is not the right method for effective pre-cooking and only risks further damage.

In fact, with this system, your eggplants will lose their water and obviously burn in some places. As a result, they automatically become inedible after frying due to their hardness and too bitter taste. Then it takes too long, about 1 hour, and to be honest, it’s not worth it even for an unsatisfactory result. So, avoid this method and use the right one.

Cook the eggplant in the microwave.

What you should do is wash and dry the eggplants thoroughly. After removing the tip, you can cut it into any shape you want or according to the recipe you want to prepare. Once this is done, you should place the vegetables on a plate and place them in the microwave, where you will cook them for 8 minutes at a power of 800-1000 watts. Then wait for them to cool before frying them. You will see that with this method of pre-cooking, the eggplants not only do not soak in oil, but most importantly, they retain their flavor.

If you’re making a quick side dish, we recommend not frying it. To get a good dish, all you have to do is finish cooking it in the microwave and then season it with a little olive oil and salt. Once the eggplants are cooked, you can use them as you wish, prepare a good Parmesan, stuffed rolls, a timpani, meatballs or simply a first course. In this way, you can eat delicious and healthy eggplants in a short time.
